We are PROUD to be a Scout & Cellar consultant and believe in all they do. I personally have not drank wine for 7 years prior to finding them. I have been living a paleo lifestyle, now more keto, for the last 10 years due to my core belief system in eating this way for health purposes and my auto immune issues. I have found that wine typically makes me feel very sick due to the sugar content.

This wine fits into the Paleo/Keto system as having a low RS (residual sugar) content. When visiting the site you can find all the RS levels in their descriptions and many have 0-.05 per a serving. A typical 5-ounce glass of Scout & Cellar wine contains 15 grams of alcohol and 0-2 grams of actual carbohydrates. The body produces 7 calories per gram of alcohol. Therefore, a 12.5% alcohol wine in a 5-ounce serving equals 100 calories (1.6 x 5 x 12.5%). Compare this to a conventional 5-ounce glass of wine, containing up to 300 calories because of the residual sugar! It is a much healthier choice, and pairs VERY well with our meats that also come from a biodynamic farming method.

Why Biodynamic farming for your meat and wine?

The loss of the world’s fertile soil and biodiversity, along with the loss of indigenous seeds and knowledge, pose a mortal threat to our future survival. According to soil scientists, at current rates of soil destruction (i.e. decarbonization, erosion, desertification, chemical pollution), within 50 years we will not only suffer serious damage to public health due to a qualitatively degraded food supply characterized by diminished nutrition and loss of important trace minerals, but we will literally no longer have enough arable topsoil to feed ourselves. Without protecting and regenerating the soil on our 4 billion acres of cultivated farmland, 8 billion acres of pastureland, and 10 billion acres of forest land, it will be impossible to feed the world, keep global warming below 2 degrees Celsius, or halt the loss of biodiversity.  The key to regenerative agriculture is that it not only “does no harm” to the land but actually improves it, using technologies that regenerate and revitalize the soil and the environment. Regenerative agriculture leads to healthy soil, capable of producing high quality, nutrient dense food while simultaneously improving, rather than degrading land, and ultimately leading to productive farms and healthy communities and economies. It is a dynamic and holistic, incorporating permaculture and organic farming practices, including conservation tillage, cover crops, crop rotation, composting, mobile animal shelters and pasture cropping, to increase food production, farmers’ income and especially, topsoil. Another Important fact, especially for me being gluten free for 20 years, Is that all the wines are gluten free! 
“Wine as nature intended” means Customers can enjoy every glass without worrying about added gluten. Mass-produced wines use synthetic additives and fining agents that sometimes contain gluten. Because gluten does not bind as well to organic matter (the good stuff!) when compared to other fining agents, our winemakers do not use it. Also, while it used to be a part of the fermentation and storage process, wheat paste is not used to seal the barrels for Scout & Cellar wines.
